B.A 2nd Year Home Science 1st Paper Syllabus

  • Unit-1: Food And Nutrition - Nutrition and health (definition and interrelationship), nutrition-related terminologies, Food- definition, Chemical composition of food
  • Unit-2: Basic Food Group - a function of food, basic food group, the importance of basic food group in the balanced diet.
  • Unit-3: Meal Planning - Factors to be considered when planning meals for the family, formulation of a balanced diet during, infancy, childhood, adolescence, adulthood (including pregnancy and lactation), old age
  • Unit-4: Energy Value And Calorimetry - Energy value of the food, calorimetry, bomb calorimeter, Nutrient Requirement, factor affecting the nutritional requirement, minimum nutritional requirement and RDA, formulation of RDA and dietary guidelines- reference man and reference women.
  • Unit-5: Macro Nutrients - Macronutrientsmicronutrients, their sources classification, functions.
  • Unit-6: Micronutrients - Micronutrients, their sources classification, functions.
  • Unit-7: Nutrient Deficiency Disorders - Nutritional deficiency disorders its aetiology, macronutrient deficiencies, vitamin deficiencies, mineral deficiencies, water deficiencies
  • Unit-8: Composition Of Cereal And Pulses - Brief discussion on the structure, nutritional composition and function of various foods like - Cereals, Pulses, legumes
  • Unit-9: Composition Of Various Food Stuff - Brief discussion on the structure, nutritional composition and function of milk and milk products, fruits and vegetables, eggs and meat & meat products, fats and oils, tea, cocoa and coffee, spices and condiments
  • Unit-10: Improving Nutritional Quality Of Foods - Various methods to enhance the nutritional quality of food, germination, fermentation, supplementation, fortification, enrichment and substitution, methods to retain the nutritive value of food products during pre-preparation and cooking.
  • Unit-11: Cooking Methods - Various cooking methods based on the medium of cooking, Traditional cooking methods like boiling, frying, roasting, poaching, parboiling etc, Advanced cooking methods like steaming, pressure-cooking, grilling, baking, microwave cooking, solar cooking and etc.
  • Unit-12: Food Adulteration - Meaning, Common food adulterants. Ways to identify them at the household level and various laws and government policies to eradicate them.
  • Unit-13: Food Hygiene And Sanitation - Sources of contamination of water, treatment of water, food handling, food contamination, control of insects and rodents, Practical rules for food sanitation, maintenance of hygiene while cooking, environment and personal hygiene and sanitation.
